Ingredients
  • 320g penne
  •  200g radicchio tardivo
  • 100g AmicEarth Organic Whole Raw Walnut Butter
  • 1 shallot
  • 50ml dry white wine (optional)
  • 50g organic walnut pieces
  • Salt and pepper to taste
  • Extra virgin olive oil to taste
Preparation
  1.  Thoroughly wash the radicchio and cut it into thin strips.

  2. Finely chop the shallot and sauté it in a large pan with a drizzle of extra virgin olive oil.
  3. Add the radicchio and cook for 5-7 minutes, stirring often, until wilted.
  4. Deglaze with white wine (if using), allowing it to evaporate completely.
  5. Add a bit of cooking water to the room temperature Organic Whole Raw Walnut Butter and slowly melt it, stirring continuously to achieve a smooth cream.
  6. Cook the penne in plenty of boiling salted water and drain al dente.
  7. Toss the penne with the radicchio mixture and the walnut cream, mixing well to combine the flavors.
  8. Add the walnut pieces, salt, and pepper to taste.
