  • 200g wholemeal flour
  • 80g cornstarch
  • 200ml water
  • 100ml unsweetened fruit juice
  • 50g AmicEarth almond protein
  • 160g whole cane sugar
  • 2 tablespoons almond oil
  • 50ml sunflower oil
  • 100g grated carrots
  • 50g chopped almonds
  • 30g goji berries or raisins
  • 30g raw cocoa nibs or chocolate chips
Preparation

Mix all ingredients in the order listed until a smooth batter is achieved.

Baking:
Bake at 180°C for 35 minutes, then at 160°C for an additional 10 minutes.
